Signals relating to all of the processes involved in the initiation and cessation of eating are integrated and organised by the brain. These controlling mechanisms have been studied mainly in experimental animals. This is because humans are more complicated, with many cultural and social conventions, which influence food intake, and which can override the physiological mechanisms.
